1. Will the Mustang wide touring seat work as a solo seat when not riding with a passenger?

2. Other than the Yamaha fender rack are there any other options for the fender and will the rack work with saddlebags and the mustang seat?

Yes to number one. I just bought that seat and you can use it as a two up. I also bought the little fender bib for the rear to cover up all the nasty stuff showing when you remove the passenger seat.
